My friend Christy is not only fun and sweet, she is an excellent cook. She really enjoys spending time in the kitchen and has shared some really great recipes with me, like this salsa.
If you are a Texan, you know that TX/OU weekend is a big deal. College students flood into the DFW metroplex coming from Norman, Oklahoma in the north and Austin, Texas in the south and there are too many parties to count.
The big event is the 11:00 AM football game at The Cotton Bowl, (at The State Fair of Texas) but there are lots of parties Friday as well as Saturday night. It is such a FUN weekend and something our whole family looks forward to every year.
My brother graduated from The University of Oklahoma and I graduated from University of Texas, so my parents had a “house divided” with a UT flag on one side of their front porch and and OU flag on the other side. For years my parents hosted a TX/OU party and my mom always served Mexican food. Because- who doesn’t love Mexican food!?
Last year, when we still lived in the Dallas area, our older daughter brought a bunch of friends home from UT for the weekend and my momma heart was filled to the brim with joy. We lived on a double lot and had a volleyball net set up in the extra green space in our yard. The kids played volleyball in the backyard, swam, ate a bunch of yummy food, and got all fired up for the big game. 2022 was a good year for The Longhorns. We won 49-0!
Ellie requested I make chicken enchiladas, black beans and cilantro lime rice. Of course there was lots of queso, guacamole and salsa involved. Plus loads of chocolate chips cookies and copycat crumbl cookies, too!
Because I had not made homemade salsa before, and when I googled, “Homemade Salsa” literally thousands of recipes popped up, I asked Christy if she had a homemade salsa recipe she loved. She shared hers with me.
It is so easy to make. You literally just add the ingredients to a blender or food processor and blend it. It is brimming with flavors, but nothing over powering or too spicy. Put it in a few mason jars and you have one to keep and one to share! (unless you have 20 for dinner ;)
Ingredients
The ingredients are all easy to find in your local grocery store.
- 2 cups loosely packed cilantro
- 1 Tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cumin
- 2- 14.5 ounce cans fire roasted tomatoes
- 2 fresh jalepenos
- 1/4 cup jarred jalapeños, diced
- 3 Tablespoons lemon or lime juice
- 3 Tablespoons white vinegar
How to…
I don’t know about you, but touching fresh jalepenos makes me nervous. Maybe it’s because I wear contacts and touch my eyes more often than I realize, but I always wear gloves when I’m preparing them at home. I usually just use the gloves I wash my dishes with and give them a really good soapy wash before and after cutting the jalepenos. Other than that, there is nothing hard or tricky about this recipe.
