Easy Breakfast Casserole Recipe

Do you have a favorite meal of the day? I absolutely love breakfast. Whenever our family goes out of town I get a little too excited about an all you can eat breakfast buffet! Maybe it’s because I can get a little bit of everything and not feel badly about it…I love crispy bacon, cheesy grits, yummy muffins or my sweet strawberry bread, assorted fruits and berries, and of course, a good breakfast casserole. This easy breakfast casserole can be made gluten free and is thrown together the night before. Big bonus, it only requires 6 ingredients. 

Here’s What You’ll Need for This Easy Breakfast Casserole 

  • 1 pound of breakfast sausage. We use spicy sausage to add extra flavor. 
  • 6 large or extra large eggs
  • 6-7 pieces of bread. I use gluten free bread which is much thinner than regular bread; so I use 7 pieces. If you use Texas toast, you’ll need 6. Basically you just want to cover the bottom of the dish with the bread slices.
  • 3/4 teaspoon of salt (everyone has salt in their pantry so this doesn’t really count as an ingredient…right?)
  • 1 teaspoon dry mustard. This is a key ingredient because it adds a bit of tang to the recipe.
  • 2 cups sharp cheddar cheese, or cheese of your choice. I like to grate my cheese from a block. It tastes better and melts better in my opinion.
  • 2 cups milk. I use 2%. The original recipe called for half and half but I think it tastes just as good with regular milk.


I always make this breakfast casserole the night before a holiday, birthday or special occasion for our family. It is also great to take to a potluck or serve for ladies brunch. I recently made one for a Friendsgiving Brunch and it was a big hit!

How to Make Breakfast Casserole 

  • Fry and crumble your sausage. Use paper towels to drain drain off as much grease as possible. I put paper towels on a plate, put the sausage on top, then put extra paper towels on top.
  • Cut your bread into small pieces. You can leave the crust on or take them off. I’ve made it both ways and they are equally delicious. I make my casserole gluten free and it is just as yummy as the original.
  • Grease and 9 x 13 baking dish or foil pan.
  • Place the bread in the bottom of the baking dish. 
  • Sprinkle the cooked sausage over the bread. 
  • Put the grated cheese on top of the sausage.
  • Mix the remaining ingredients really well. Pour this over the sausage cheese and bread mixture. Cover with foil and chill at least 8 hours or overnight. 

Morning of Instructions

Take the casserole out of the refrigerator and let it sit on the counter 30 minutes or so before you bake it.   While it’s coming to room temperature. Preheat your oven to 350 degrees.

Bake until a knife inserted in the middle comes out clean. 40 to 50 minutes.  Mine always takes around 45-50 minutes.

What to Serve with Breakfast Casserole

We like to serve breakfast casserole with easy baked cheese grits, a sweet bread or muffin, fruit salad, and if you’re a real sausage lover, sausage and crescent rolls

  • 6-7 slices bread enough to cover the bottom of the dish
