Frozen Strawberry Dessert

This delicious frozen strawberry dessert can be made 2-3 weeks ahead of time and will soon become your family’s favorite.
My mom is an excellent cook. However, she didn’t bake a lot or make a whole lot of sweet treats when I was growing up. The one dessert that always makes me think of my mom is her Strawberry Delight. It is light and creamy and has the perfect amount of sweetness. I love this dessert year round, but it’s especially perfect in the summertime!!
(FYI-The one thing you will definitely need when making this dessert is a KitchenAid stand mixer.)
Frozen Strawberry Delight Ingredients
This yummy dessert has ingredients that you most likely already have in your refrigerator or pantry.
Flour (I use gluten free)
Brown Sugar
Chopped Pecans
Butter
Strawberries
White Sugar
Lemon juice
Egg whites
Heavy cream
How to Make Strawberry Delight
You start by combining the flour, brown sugar, 1/2 cup chopped pecans and 1 stick melted butter. You bake this on a cookie sheet at 350 for 20 minutes, stirring every five minutes or so. *If you really like crumbles, you might want to do 1.5 times the crumble recipe. While that is baking, combine 2 cups chopped strawberries, one cup of sugar, 2 teaspoons of lemon juice and two egg whites in a KitchenAid stand mixer. Beat this on high-speed for 20 minutes! In a separate bowl, beat the whipping cream. Fold the cream into the strawberry mixture.
Make sure the crumble mixture is completely cooled. Then put about 1/2 to 2/3 in the bottom of a 9 x13 Pyrex dish. Top with the strawberry mixture. Sprinkle the remaining crumble on top. (I used 2 separate dishes because I’m serving it for 2 different occasions. I love this red baking set!) Cover tightly and put in the freezer. It keeps well for 2 to 3 weeks. Not that it will last that long!!

Materials
- 1 Cup All Purpose Flour I use gluten free
- 1/3 Cup Brown Sugar
- 1/2 Cup Chopped Pecans
- 1/2 Cup Butter melted
- 2 cups Diced Strawberries
- 1 Cup White Sugar
- 2 Teaspoons Lemon juice
- 2 Egg whites
- 1 Cup Heavy Whipping Cream
Instructions
- Start by combining the flour, brown sugar, 1/2 cup chopped pecans and 1 stick melted butter.
- Bake the mixture on a cookie sheet at 350 for 20 minutes, stirring every 5 minutes or so.
- While that is baking, combine 2 cups chopped strawberries, one cup of sugar, 2 teaspoons of lemon juice and two egg whites in a KitchenAid stand mixer. Sounds crazy, but you beat this on high-speed for 20 minutes!
- Once it is mixed well, whip the cream in a separate bowl and fold it into the strawberry mixture.
- Make sure the crumble mixture is completely cooled. Then divide it and put about 1/2 to 2/3 of the mixture in the bottom of a 9 x13 Pyrex dish.
- Top with the strawberry cream mixture. Sprinkle the top with the remaining crumble.
- Cover tightly and put in the freezer. It keeps well for 2 to 3 weeks! Not that it will last that long!!
