The Best Oat Bran Chocolate Chip Cookies



These soft, chewy, chocolate chip cookies have a surprise ingredient- oat bran- and will become your family’s favorite! I’ve tried who knows how many chocolate chip cookie recipes and this one is the very best!
I’ve tried all butter.
All crisco.
And a combination of the two.
My favorite- no fail recipe-includes butter and oil.
And also has a little oat bran in the recipe. Plus extra vanilla for good measure:)
Everyone loves these cookies so much, I always made them when we had a party, kids had a dance or when friends came over to hang in the backyard. We would make them for teacher gifts and always made extra to take to friends. These cookies are guaranteed to make you the most favorite mom, neighbor, co-worker… you get the idea!! My girls friend’s ask for these cookies, this easy brownie recipe and my Texas Sheet Cake recipe when they come visit!
Oat Bran Cookie Ingredients
The ingredients are all the “normal” things you expect to find in chocolate chip cookies. I do think the 1/2 oil, 1/2 butter makes them extra crispy on the outside and chewy on the inside-perfection to me! I also add a few tablespoons of oat bran which adds a little something special. Most recipes have 1 teaspoon vanilla but I really like using 2 teaspoons!
- Vegetable Oil
- Butter, softened
- Sugar
- Brown sugar
- 2 eggs
- Vanilla extract
- All purpose flour
- Baking soda
- Baking powder
- Salt
- Oat bran
- Semi sweet chocolate chips
Cookie Instructions
I follow the usual steps in making cookies. Make sure to never put cold cookie dough on a hot cookie sheet. You’ll want to have a couple of cookie sheets ready when you start baking- or wait until the first batch cools to bake the second batch. If you don’t have parchment paper, no big deal. If I have it, I use it, but don’t make a special trip to the store to buy some if I don’t.
- Preheat the oven to 350. Line baking sheet with parchment paper. These baking sheets are my favorite!
- Beat oil, butter and sugars until well mixed. I use a Kitchen Aid Stand Mixer and love it.
- Add eggs one at a time. Mix well.
- Add the vanilla
- Mix dry ingredients well in a separate bowl
- Slowly add dry ingredients to wet ingredients being careful to mix slowly (or you will have flour all over your floor…ask me how I know ;)
- Add chocolate chips by hand
- Use a medium (2 tablespoons) cookie scoop and place balls 2 inches apart on cookie sheet
- Bake for about 10 minutes (or 11-12 if you live at a high altitude:)
- Cool for 2 minutes on pan then remove to cool








Note: Freezing the un-baked dough is easy! I usually scoop them onto a cookie sheet (see picture above left) and flash freeze them before putting them into freezer ziplock bags. That way you always have cookie dough on hand when you have a hankering for a sweet treat:)

- 1 cup packed brown sugar
- 2 eggs room temperature
- 2 teaspoons vanilla
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 tablespoons oat bran
- 1 3/4 cups semi sweet chocolate chips
Instructions
- Preheat the oven to 350.
- Beat oil, butter and sugars until well mixed.
- Add eggs one at a time. Mix well.
- Add the vanilla
- Mix dry ingredients (flour through oat bran) well in a separate bowl
- Slowly add dry ingredients to wet ingredients being careful to mix slowly
- Add chocolate chips by hand
- Use a medium (2 tablespoons) cookie scoop and place balls on cookie sheet
- Bake for 10-12 minutes
- Cool for 2 minutes on pan then remove to cooling rack.
