How to Make Our Favorite Healthy Mexican Black Beans

Slow cooked to perfection, these healthy Mexican black beans are made with canned black beans, red and yellow bell pepper, onion and spices.

As I’ve mentioned, one of my family’s favorite meals is Creamy Chicken Enchiladas. My husband and girls always request them for birthdays or special occasions. I always serve them with these black beans, rice and guacamole. Our favorite healthy black beans are also great with beef barbacoa tacos or really any Mexican meal!

Ingredients

Goya seasoning can be found in the Mexican aisle in your grocery store or can be ordered online from Amazon.

  • onion
  • red bell pepper
  • yellow or orange bell pepper
  • olive oil or butter
  • 3 cans of black beans
  • Goya seasoning

Preparation

These could not be any easier to prepare! So easy that my college aged girls can make them. You literally just chop and sauté the onions and peppers, add the black beans and spices, and simmer for 20-30 minutes! Make sure you stir fairly frequently so they don’t stick to the bottom of the pan.

  • Add 2 tablespoons olive oil to your large pot. I like this one from Amazon
  • Add chopped onion and bell peppers
  • Saute until soft
  • Add cans of Black Beans
  • Add Goya Seasoning
  • Simmer for 20-30 minutes

These easy and healthy black beans are great leftover in chicken nachos or as a bean dip with tortilla chips. I hope you love them as much as we do!!

Healthy Black Beans

Materials

  • 1/2 medium onion, chopped
  • 1/2 red bell pepper chopped
  • 1/2 yellow or orange bell pepper chopped
  • 2 Tablespoons olive oil or butter
  • 3 cans of black beans (seasoned or plain)
  • 1 Tablespoon Goya seasoning

Instructions

  • Add 2 tablespoons olive oil to your large pot
  • Add chopped onion and bell peppers to pot
  • Saute until soft. About 5 minutes
  • Add cans of Black Beans
  • Add Goya Seasoning
  • Simmer for 20-30 minutes, stirring every 5 minutes
